It is that time of the summer season when you can walk into any store and buy beautiful, sweet summer fruit for a song. I found these sweet nectarines in a huge box today and instantly decided that they will form part of our Sunday afternoon lunch.

One of the great things about nectarines is their fresh tart taste once they are roasted. So I reckoned that a sweet, creamy caramel sauce with a sprinkle of black salt was just the thing to dress them up with.

What can I serve with roasted nectarines and caramel sauce?

I served these fruity sensations with a helping of vanilla ice-cream but they will be great with a dollop of Chantilly cream or how about some fresh Mascarpone cheese?

To create Chantilly cream:

  • Scrape the seed from one vanilla pod and add them to one cup of whipping cream with two tablespoons of castor sugar.
  • Beat the mixture with an electric beater until soft peaks form. This will take about 3 minutes.

In the alternative, you can add one teaspoon of vanilla extract to one tub of Mascarpone cheese and mix it in.

All three of the above combinations will steal your tastebuds’s heart.

What ingredients will I need?

  • Fresh ripe nectarines
  • Salted butter
  • Fresh cream
  • Golden syrup
  • Vanilla ice-cream
  • Black salt to garnish with

How to make roasted nectarines and caramel sauce:

  1. Start with cutting the nectarines in half and removing the stones from the fruit.
  2. Add the butter and golden syrup to a small saucepan and bring to a boil.
  3. Simmer until the sauce thickens. It should have a caramel color.
  4. Remove from the stove and add the cream.
  5. If you wish, you can also add a few drops of vanilla extract.
  6. Garnish with black salt or even Maldon sea salt.
  7. Rub a griddle pan with some butter and warm up over high heat.
  8. Place the nectarines face down on the pan and roast until soft. It will not take more than five minutes. Remove from the pan and serve with the caramel sauce and ice-cream.

  • 60 ml salted butter
  • 60 ml golden syrup
  • 60 ml fresh cream
  • 2 ml vanilla extract
  • 4 medium nectarines
  • Hawaiian black salt or Maldon sea salt
