Delicious plaatkoekies (Flapjacks) is a real hit on a cool rainy weekend morning. It is also my family’s favorite camp breakfast. This recipe makes enough to fill all the hungry tummies and maybe even have a helping left for tea time.

If you have been following me you would know by now that I just love a slow Saturday brunch. Pancakes or plaatkoekies is usually part of my family’s repertoire.
I like to have mine with all sorts of spreads like my homemade jam, fresh organic honey, chocolate spread and fresh fruit. I used fresh figs and honey this morning. Blueberries, bananas, strawberries and even chocolate chips will tickle your tastebuds when you add them to these pancakes.
They are really easy to make and require just a few basic ingredients but the little effort that it takes rewards you with a delicious treat.

Can I freeze these delicious plaatkoekies (flapjacks)?
Plaatkoekies (flapjacks ) can easily be frozen to save for a later occasion or a lunch box. I like to freeze mine packed with little pieces of parchment paper between them. They are great when added frozen to a lunchbox to defrost just before lunch break.
They can easily be reheated in a non-stick pan on the stove or on a baking sheet in the oven. It is advisable to cover your plaatkoekies (flapjacks) with some foil to keep them from drying out.

Ingredients to make plaatkoekies (flapjacks):
You will need:
- Castor sugar
- Eggs
- Flour
- Baking powder
- Salt
- Vanilla
- Milk
- Sunflower oil

How to make the perfect plaatkoekies.
This is such an easy recipe that my twelve-year-old son makes it for us on our camping trips.
All you need besides a frying pan is a medium-size mixing bowl, wooden spoon, and a whisk.
You will need to:
- Add the sugar, vanilla, and eggs to your mixing bowl and whisk until light and fluffy.
- Add half of the milk (150 ml)as well as the oil and whisk well.
- Sieve all of the dry ingredients into the egg mixture and mix well with a wooden spoon.
- Add the rest of the milk and mix.
- Let the mixture rest for 15 minutes on the countertop.
- Heat a little bit of oil in a frying pan over medium heat.
- Add spoons full of batter to the heated pan. When bubbles start to form flip the flapjacks over. When both sides are golden, remove from the heat.
- Repeat step 7 until all of the batter has been cooked.
- Serve with fresh butter, preserves, honey, fresh fruits, cream or cheese if you choose.

- 5 ml vanilla
- 30 ml sunflower oil
- 500 ml cake flour
- 20 ml baking powder
- 1 large pinch salt
Instructions
- Add the sugar, vanilla, and eggs to your mixing bowl and whisk until light and fluffy.
- Add half of the milk (150 ml)as well as the oil and whisk well.
