  1. Add mince, parsley, onion, salt, pepper and coriander to a mixing bowl and mix thoroughly. Divide the mince mixture into 8 even sized balls. Press slightly flat with the palm of your hand to form patties.
  1. Rest the patties in the refrigerator for 1/2 an hour.
  2. After 1/2 an hour remove the patties from the refrigerator and add a little olive oil to a heated skillet. Fry the patties for one minute on a side, flipping them over 3 times. When done remove the skillet from the heat and the patties from the skillet.
  3. Heat some oil in the skillet and fry the bacon until crispy. Remove from heat
  4. In another frying pan, add a teaspoon of olive oil and fry the eggs until the white is cooked but the yellow is still slightly runny.
  5. Lastly assemble burgers by placing all of the ingredients on a toasted burger bun.
