Roasted pear and cabbage

This roasted pear and cabbage with blue cheese and walnuts is a delicious and pretty side dish that goes very well with roasts. It has just the right amount of fruity sweetness from the pears, crunchiness from the walnuts and cabbage, as well as savory creaminess from the blue cheese.

Ingredients

  • 2 fresh ripe pears
  • 2 small savoy cabbages
  • 100 g blue cheese I used Fairway"s Blue Rock which I bought from Woolworths
  • 1/2 cup walnuts chopped
  • 1 lemon's juice
  • olive oil to drizzle
  • salt and pepper to taste
  • fresh herbs to garnish with

Instructions

  • Preheat the oven to 200° C
  • Cut the savoy cabbage length-wise and place it on a roasting tray.
  • Drizzle with olive oil and roast for 20 minutes.
  • Add the pears, sprinkle everything with salt and pepper. Roast for another 20 minutes.
  • Once the pears are caramelized and the cabbage is soft remove from the oven and drizzle with lemon juice.
  • Top with the blue cheese and walnuts and garnish with fresh herbs like thyme just before serving.

Notes

If you feel like it you can dry roast the walnuts in a pan for a few minutes to bring out the nutty flavors.
