Roasted nectarines and caramel sauce

Equipment

  • Griddle pan

Ingredients

  • 60 ml salted butter
  • 60 ml golden syrup
  • 60 ml fresh cream
  • 2 ml vanilla extract
  • 4 medium nectarines
  • Hawaiian black salt or Maldon sea salt

Instructions

  • Cut the nectarines in half and remove the stones from the fruit.
  • Place aside.
  • Add the butter and golden syrup to a small saucepan and bring to a boil.
  • Simmer until the sauce thickens. It should have a caramel color.
  • Remove from the stove and add the cream.
  • If you wish, you can also add a few drops of vanilla extract
  • Garnish with black salt or even Maldon sea salt.
  • Rub a griddle pan with some butter and heat over high heat.
  • Place the nectarines face down on the pan and roast until soft. It will not take more than five minutes. Remove from the pan and serve with the caramel sauce and ice-cream.

Notes

Serve the nectarines with ice-cream, Chantilly cream or vanilla Mascerpone.
